DIY – Mango Fruit Rollups
These amazing Mango Fruit Rollups have a single ingredient: 100% Pittman & Davis mangoes. They are a terrific snack because they have no added sugar and no chemicals. They are fun to make and once ready, they allow you to take this healthful fruit on the go. All you need is a food processor and a few hours, but the results are worth it.
4 cups Pittman & Davis mango, peeled and chopped
Preheat oven to 175 degrees F. Process the chopped mango in a food processor (or a blender) until creamy and smooth. Line two cookie sheets with parchment paper, and evenly distribute the mixture between the two pans. Spread the puree out with a rubber spatula to form an even layer.
Bake for 3 to 4 hours until the fruit is dried and can be lifted from the edge. Rotate pans after 2 hours. The bottom should be dried as well. Once done, allow to cool to room temperature. Cover each sheet with wax paper and turn over to remove. Peel the parchment paper from the bottom, cut into strips, and store refrigerated in an airtight container for up to one week.
