{"id":4578,"date":"2016-08-08T17:13:00","date_gmt":"2016-08-08T17:13:00","guid":{"rendered":"https:\/\/blog2.pittmandavis.com\/recipe\/roasted-orange-chicken-legs\/"},"modified":"2022-02-11T12:45:06","modified_gmt":"2022-02-11T12:45:06","slug":"roasted-orange-chicken-legs","status":"publish","type":"cuisine-recipe","link":"https:\/\/blog2.pittmandavis.com\/recipe\/roasted-orange-chicken-legs\/","title":{"rendered":"Roasted Orange Chicken Legs Recipe"},"content":{"rendered":"<p>Prep: 15 minutes<br \/>\nCook: 35 minutes<br \/>\nChill time: 30 minutes<br \/>\nYield: 4 servings<\/p>\n<p>1 cup freshly squeezed orange juice<br \/>\n1\/2 cup honey<br \/>\n2 tablespoons olive oil<br \/>\n3 cloves garlic, minced<br \/>\n1 tablespoon orange zest<br \/>\n11\/2 teaspoons kosher salt<br \/>\n1\/2 teaspoon freshly ground pepper<br \/>\n2 pounds chicken drumsticks (about 8)<br \/>\n4 mini sweet red bell peppers (2 seeded and thinly sliced and 2 whole)<br \/>\n4 mini sweet yellow bell pepper (2 seeded and thinly sliced and 2 whole)<br \/>\n1 large carrot, thinly sliced<br \/>\n1 large zucchini, thinly sliced<br \/>\n1 large squash, thinly sliced<br \/>\n1 orange, thinly sliced<\/p>\n<p>1. Preheat oven to 400\u00b0F.<\/p>\n<p>2. In large mixing bowl, whisk together, orange juice, honey, olive oil, garlic, orange zest, salt and pepper. Place chicken in a large shallow dish or zip-top plastic freezer bag. Add orange juice marinade; cover and seal and chill 30 minutes for up to 1 hour.<\/p>\n<p>3. Remove chicken from marinade and place in a single layer in a large baking dish or roasting pan. Add bell peppers, carrots, zucchini, squash and oranges. Pour marinade evenly over the top.<\/p>\n<p>4. Bake chicken, basting occasionally, 30 minutes or until an instant-read thermometer inserted in the chicken registers 165\u00b0F.
