But not an overpowering one \u2013 sweeter and milder than other grapefruit, you&#8217;ll want to dip your fork into the tasty sauce again and again. Not just for chicken \u2013 the citrusy sauce also works well with pork!<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<ul>\n<li><em>3-4 Chicken breasts<\/em><\/li>\n<li>\u00a04 garlic cloves, crushed<\/li>\n<li>1 (2&#8243;) piece fresh ginger, crushed<\/li>\n<li>1 cup fresh <a href=\"https:\/\/www.pittmandavis.com\/farm-fresh-citrus\/c\/7009\/\">Pittman &amp; Davis citrus juice<\/a><\/li>\n<li>\u00bd cup soy sauce<\/li>\n<li>1\/3 cup distilled white vinegar<\/li>\n<li>\u00bc cup sugar<\/li>\n<li>1 (3\u00bd\u20134 lbs.) whole chicken, halved, backbone removed<\/li>\n<li>Kosher salt<\/li>\n<\/ul>\n<p><em>Dipping sauce and assembly:<\/em><\/p>\n<ul>\n<li>1 lemongrass stalk, top third removed<\/li>\n<li>2 shallots, halved<\/li>\n<li>2 scallions, dark green tops removed<\/li>\n<li>4 garlic cloves, unpeeled<\/li>\n<li>1 pc. ginger, peeled, very finely chopped<\/li>\n<li>2 Tbsp. fish sauce<\/li>\n<li>2 Tbsp. fresh lime juice<\/li>\n<li>1 tsp. sugar<\/li>\n<li><a href=\"https:\/\/www.pittmandavis.com\/ruby-red-grapefruit\/c\/ft_1001_2\/\">1 Rio Ruby Red Grapefruit\u00a0<\/a><\/li>\n<li>Cilantro sprigs (for serving)<\/li>\n<\/ul>\n<h3><strong>Directions:<\/strong><\/h3>\n<p><em>To prepare the chicken:<\/em><\/p>\n<ol>\n<li>Combine garlic, ginger, citrus juice, soy sauce, vinegar and sugar in a medium bowl.<\/li>\n<li>Place chicken breasts in a large, re-sealable plastic bag and add marinade. Seal bag, pressing out any air. Chill at least 12 hours and up to 2 days.<\/li>\n<li>Place rack in top third of oven; preheat to 425\u00b0F.<\/li>\n<li>Remove chicken from bag; discard marinade. Pat chicken dry with paper towels; season lightly with salt.<\/li>\n<li>Roast chicken on a foil-lined rimmed baking sheet until deep brown and cooked through, 30\u201340 minutes.<\/li>\n<\/ol>\n<p><em>To prepare the dipping sauce:<\/em><\/p>\n<ol>\n<li>Bruise lemongrass stalk by lightly crushing with a rolling pin. Bring lemongrass and \u00bd cup water to a boil in a small saucepan. Remove from heat and let sit until very fragrant (8\u201310 minutes). Strain lemongrass infusion into a large measuring glass.<\/li>\n<li>Heat a large, cast iron skillet over medium-high. Toast shallots, scallions, and garlic, tossing occasionally, until dark brown in spots (8\u201310 minutes). Let cool. Remove skins from garlic and coarsely chop garlic with shallots, scallions, and chili.<\/li>\n<li>Add garlic, shallots, scallions, chili and ginger to lemongrass infusion. Stir in fish sauce, lime juice, and sugar.<\/li>\n<li>Using a sharp knife, remove peel and white pith from Grapefruit; discard. Working over a medium bowl, cut along sides of membranes to release segments. Squeeze juice from membranes into bowl; discard. Tear segments into large pieces. Mix into dipping sauce.<\/li>\n<li>Transfer chicken to a platter, spoon some dipping sauce over, and top with cilantro.
