Balancing the sweetness of mangos with the acidity of lime, this dish has a pleasing array of contrasting smooth and crunchy textures with an added spicy kick from the chili.<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<p><em>For the salad:<\/em><\/p>\n<p>1 large <a href=\"https:\/\/www.pittmandavis.com\/mangos\/p\/tropicalmangoes\/\">Pittman &amp; Davis Tropical Mango<\/a><\/p>\n<p>1 large red pepper<\/p>\n<p>Handful of Cos lettuce leaves<\/p>\n<p>2 spring onions, white parts sliced finely<\/p>\n<p>1 small zucchini<\/p>\n<p>1 red chili pepper, diced finely<\/p>\n<p>Handful of roasted cashews (or peanuts), chopped<\/p>\n<p>Fresh coriander and\/or mint, chopped + a few whole leaves for garnish<\/p>\n<p><em>For the dressing:<\/em><\/p>\n<p>2-3 Tbsp. lime juice<\/p>\n<p>1 Tbsp. sesame oil<\/p>\n<p>1 small garlic clove, pressed<\/p>\n<p>2 Tbsp. tamari (for gluten-free version) or soy sauce<\/p>\n<p>1 Tbsp. maple syrup or sugar<\/p>\n<p>Ground pepper, to taste<\/p>\n<h3><strong>Directions:<\/strong><\/h3>\n<ul>\n<li>Whisk dressing ingredients together in a small bowl and set aside.<\/li>\n<li>Using a sharp knife, julienne mango, pepper and zucchini. Tear Cos lettuce leaves roughly.<\/li>\n<li>In a large mixing bowl, mix together all salad ingredients apart from nuts.<\/li>\n<li>Mix in dressing and adjust seasonings to taste.
