It\u2019s full of sweet and cool watermelon, cucumber and mint leaves, while the avocado and feta cheese add a savory touch. A lime-garlic vinaigrette dressing adds zing. For extra bite, toss in some sliced hot pepper!<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<p><em>For the salad:<\/em><\/p>\n<p>5 c. Pittman &amp; Davis <a href=\"https:\/\/www.pittmandavis.com\/personal-watermelon\/p\/wtm\/\">Watermelon<\/a>, cubed<\/p>\n<p>1 c. English cucumber, diced<\/p>\n<p>\u00bc c. red onions, thinly sliced<\/p>\n<p>\u2153 c. feta cheese, crumbled<\/p>\n<p>1 avocado, cubed<\/p>\n<p>\u2153 c. mint leaves, torn<\/p>\n<p>\u00bd jalape\u00f1o or serrano pepper, thinly sliced, optional<\/p>\n<p>Sea salt, to taste<\/p>\n<p>For the dressing:<\/p>\n<p>2 Tbsp. extra-virgin olive oil<\/p>\n<p>3 Tbsp. lime juice<\/p>\n<p>\u00bd garlic clove, minced<\/p>\n<p>\u00bc tsp. sea salt<\/p>\n<h3><strong>Directions:<\/strong><\/h3>\n<p>In a small bowl, whisk together the olive oil, lime juice, garlic and \u00bc teaspoon sea salt. Arrange watermelon, cucumber, and red onions on a large plate or platter. Drizzle with half the dressing. Top with feta, avocado, mint, and pepper (if using) and drizzle with remaining dressing.
