This colorful, sumptuous salad comes together and brightens up any meal. Toasted pine nuts add a bit of crunch. You can even use Pittman &amp; Davis Peaches in place of the Nectarines if you prefer!<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<p><em>For the salad:<\/em><\/p>\n<p>3 <a href=\"https:\/\/www.pittmandavis.com\/nectarines\/p\/nc1\/\">Pittman &amp; Davis Nectarines<\/a>, sliced<\/p>\n<p>4 c. fresh arugula or baby spinach<\/p>\n<p>4 c. torn Bibb or Boston lettuce<\/p>\n<p>2 Tbsp. pine nuts, toasted<\/p>\n<p>2 Tbsp. crumbled blue cheese<\/p>\n<p><em>For the dressing:<\/em><\/p>\n<p>2 Tbsp. raspberry vinegar<\/p>\n<p>2 tsp. sugar<\/p>\n<p>1 tsp. Dijon mustard<\/p>\n<p>\u215b tsp. salt<\/p>\n<p>Dash pepper<\/p>\n<p>3 Tbs. olive oil<\/p>\n<h3><strong>Directions:<\/strong><\/h3>\n<p>In a large bowl, combine the first 5 ingredients. In a small bowl, whisk vinegar, sugar, mustard, salt and pepper. Gradually whisk in oil until blended.
