Perfect for summer when you want to leave your oven off, this healthy, low-calorie, vegetarian recipe is packed with flavor and makes it easy to enjoy a light but filling meal any time.<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<p><a href=\"https:\/\/www.pittmandavis.com\/mangos\/p\/tropicalmangoes\/\">1 Pittman &amp; Davis Tropical Mango<\/a>, sliced thin<\/p>\n<p>1 large avocado, sliced thin<\/p>\n<p>1 large cucumber, sliced thin<\/p>\n<p>1 head cauliflower, riced<\/p>\n<p>1 head purple cabbage, sliced thin<\/p>\n<p>1 large carrot, sliced thin<\/p>\n<p>Nori wraps<\/p>\n<h3><strong>Directions:<\/strong><\/h3>\n<ul>\n<li>Lay a nori wrap flat on countertop add a thin layer of cauliflower rice, covering about \u2154 of the nori.<\/li>\n<li>Lay cabbage, carrots, cucumbers, avocado, and mango about \u00be of the way down the nori wrap.<\/li>\n<li>Starting from the edge of the nori wrap closest to you, roll the nori up tightly. Wipe a bit of water on the furthermost edge of the nori to seal the roll.<\/li>\n<li>Using a very sharp knife, gently slice sushi into rounds.
