Crunchy walnuts plus the sweet, sliced <a href=\"https:\/\/www.pittmandavis.com\/pears\/c\/ft_1001_4\/\">Pittman &amp; Davis pears<\/a> of your choice give rich, creamy, savory risotto an autumnal twist. So rich and flavorful, this delicious comfort dish is a meal all by itself. Store leftovers in the fridge up to two days in an airtight container.<\/p>\n<h3>Ingredients:<\/h3>\n<p><em>For the risotto:<\/em><br \/>\n5 c. vegetable stock<br \/>\n2 Tbsp. olive oil<br \/>\n4 Tbsp. unsalted butter, divided<br \/>\n1 small shallot, diced fine<br \/>\n1\u215b c. short-grained risotto rice<br \/>\n\u00bd c. Gorgonzola cheese, shredded<br \/>\n\u00bc c. Parmesan cheese, grated<br \/>\nSalt and pepper, to taste<\/p>\n<p><em>For the topping:<\/em><br \/>\n1 <a href=\"https:\/\/www.pittmandavis.com\/pears\/c\/ft_1001_4\/\">Pittman &amp; Davis Pear<\/a>, cored and sliced thin<br \/>\n2 Tbsp. butter<br \/>\n2 Tbsp. chopped walnuts<\/p>\n<h3>Directions:<\/h3>\n<p>\u2022 Bring vegetable stock to a simmer in a saucepan.<br \/>\n\u2022 Heat olive oil in a large, deep skillet. Add shallot and saut\u00e9 until soft and translucent (2-4 minutes).<br \/>\n\u2022 Add two tablespoons of butter to skillet. Once butter is melted add rice. Stir frequently with a wooden spoon until rice is slightly transparent and coated with butter.<br \/>\n\u2022 Using a ladle, spoon two or three scoops of warmed vegetable stock to rice and bring to a simmer. Stir gently until liquid is absorbed, do not allow rice to dry out.<br \/>\n\u2022 Add stock, one ladle-full at a time, to stock, stirring frequently until rice is al-dente (18-20 minutes).<br \/>\n\u2022 Meanwhile, melt two tablespoons butter in a skillet. Add pears and walnuts and saut\u00e9 until pears are slightly browned (2-3 minutes each side).<br \/>\n\u2022 Once rice is cooked, remove from heat. Stir in two tablespoons of butter, parmesan, and gorgonzola.
