Low in calories but packed with flavor, onions are a must for so many dishes, and this stuffed onion recipe from Pittman &amp; Davis allows our big, mild <a href=\"https:\/\/www.pittmandavis.com\/onions\/c\/ft_1001_10\/\">Onions<\/a> to shine like they were meant to!<\/p>\n<p>Our <a href=\"https:\/\/www.pittmandavis.com\/texas-1015-onions\/p\/texas1015onions\/\">Texas 1015 Onions<\/a> are a perfect choice to use in this fragrant, flavorful dish. A wonderful accompaniment to a Sunday roast!<\/p>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<ul>\n<li>2 lbs. <a href=\"https:\/\/www.pittmandavis.com\/onions\/c\/ft_1001_10\/\">Pittman &amp; Davis Onions<\/a>, <em>peeled<\/em><\/li>\n<li>2 bacon strips, <em>cut into 1&#8243; pieces<\/em><\/li>\n<li>\u00bc c. dry breadcrumbs<\/li>\n<li>2 tsp. dried parsley flakes<\/li>\n<li>1 Tbsp. butter<\/li>\n<li>1\u00bd c. mushrooms, <em>sliced<\/em><\/li>\n<li>\u00bc tsp. salt<\/li>\n<li>\u215b tsp. ground black pepper<\/li>\n<li>\u215b tsp. ground nutmeg<\/li>\n<li>\u00bd c. broth, <em>beef, chicken or vegetable<\/em><\/li>\n<\/ul>\n<h3><strong>Directions:<\/strong><\/h3>\n<ol>\n<li>Preheat oven to 375\u00b0F.<\/li>\n<li>Bring a small amount of water to a boil in a stockpot or Dutch oven. Add onions to pot and boil until softened (about 4-6 minutes). Remove from pot and allow to cool.<\/li>\n<li>Once onions are cool enough to handle slice off a quarter inch from the tops and remove the centers, leaving a half-inch shell. Chop centers and tops of onions; set aside.<\/li>\n<li>Fry bacon in a skillet until crisp then remove to paper towels to drain.<\/li>\n<li>Saut\u00e9 chopped onion in bacon drippings until tender. Stir in breadcrumbs, parsley, butter and mushrooms; cook until mushrooms are tender.<\/li>\n<li>Crumble bacon into pieces and add to pan along with the spices; stir together.<\/li>\n<li>Stuff onion shells with breadcrumb mixture and place in a shallow, ungreased 1-quart baking dish.
