Ingredients:
½ c. juice and ½ tsp. zest, grated, from a Pittman & Davis Navel Orange
1½ c. all-purpose flour
3 Tbsp. sugar
1½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
1 large egg, room temperature
1 c. part-skim ricotta cheese
¾ c. milk
¼ c. butter, melted
½ tsp. vanilla extract
Directions:
- In a bowl, whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together egg, cheese, milk, zest, juice, melted butter and vanilla until blended. Add to dry ingredients; stir until just moistened.
- Lightly grease the griddle; heat over medium heat. Pour batter by ¼ cupsful onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn once; cook until the other side is golden brown. Serve warm with berries, dusted with powdered sugar, or with syrup.
