Clementine Sugar Cookies2021-11-07
These soft and chewy, buttery golden cookies are made using sweet Pittman & Davis Clementines, but you can use our Rio Ruby™ Red Grapefruit or Navel Oranges as well! Sparkling with sugar, these easy, citrus-y cookies are perfect for the holidays or anytime.
1 or 2 Pittman & Davis Clementines, juiced and zested
2¾ c. all-purpose flour
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1½ c. granulated sugar + more for rolling
1 c. unsalted butter, softened
1 large egg
½ tsp. teaspoon orange extract
- Preheat oven to 350° Line two large baking sheets with parchment paper.
- In a medium bowl, whisk flour, baking soda, baking powder and salt.
- In a large mixing bowl, beat butter and sugar together with paddle attachment until smooth and creamy. Mix in egg, orange extract, zest, and juice until well combined. Gradually stir in flour mixture until well combined.
- Roll dough into 1-inch balls, then roll in granulated sugar. Place on baking sheet about 1½ inches apart. Bake until cookies lightly browned around edges (about 8-10 minutes). Let cool on baking sheet for 1-2 minutes before removing to a wire rack to cool completely.
