Everything’s great when grilled! Light the tiki torches, fire up the grill, and let this appetizer/dessert turn your summer barbecue into a luau. Brown sugar and honey add extra sweetness to our tropical treasures, while zingy lime gives it an extra kick.
Ingredients:
For the pineapple:
1 Pittman & Davis Paradise Pineapple
¼ c. packed brown sugar
3 Tbsp. honey
2 Tbsp. lime juice
For the lime dip:
3 oz. cream cheese, softened
¼ c. plain yogurt
2 Tbsp. honey
1 Tbsp. brown sugar
1 Tbsp. lime juice
1 tsp. grated lime zest
Directions:
- Peel and core pineapple; cut vertically into 8 wedges. Cut each wedge horizontally into two spears. In a shallow dish, combine brown sugar, honey and lime juice; add pineapple and turn to coat. Cover and refrigerate 1 hour.
- Make the lime dip: in small bowl, beat cream cheese until smooth. Beat in yogurt, honey, brown sugar, lime juice and zest. Cover and refrigerate until serving.
- Coat grill rack with cooking spray before heating grill. Drain pineapple, discarding marinade. Grill pineapple spears, covered, over medium heat for 3-4 minutes each side or until grill marks are golden brown. Serve with lime dip.
