If you are ready to change up your tried-and-true pasta main dishes, then this Nectarine Linguine is the perfect twist on the traditional favorites. Combining complimentary flavors of sweet and salty, this easy dinner recipe will be the hit of your next stay at home night.

Fresh Nectarines are the star ingredient, with supporting roles played by both bacon and gorgonzola cheese. These ingredients blend with herbs and spices to make a light but satisfying linguini meal. 1 to 2 Nectarines, pitted and sliced

One 12-ounce box of Linguine

1 Tbs Olive Oil

4 slices of Bacon, chopped

2 Shallots, chopped

3/4 Cup Gorgonzola Cheese, crumbled

2 Tbs Fresh Thyme


Cook Linguini in salted water as directed, drain, and toss with the Olive Oil. In a large skillet, cook bacon over medium to medium-high heat until browned and crisp. Remove the cooked bacon and set aside. Add Nectarine slices and shallots to bacon drippings and cook for 3 to 4 minutes, stirring gently. Add the cooked pasta and cooked bacon to pan and toss. Add the Gorgonzola Cheese and Thyme and toss again. Serve warm and enjoy.


You can substitute fresh, peeled peaches for the nectarines.

If you like a little spice, add ¼ tsp of Cayenne Pepper when you add the pasta and bacon back to the pan.

Crumbled Blue Cheese can also be used in place of the Gorgonzola Cheese.
