This delightfully tangy and tropical take on classic lemon bars makes our Pittman & Davis Florida Red Mangoes the star of the show! Sweet, sour, and buttery, these beautiful lemon bars are ready in less than an hour and perfect for cookouts, picnics, playdates, afternoon tea, and more. The buttery, crumbly crust offsets the creamy custard filling with its fresh mango flavor perfectly and the dusting of powdered sugar adds a touch of elegance as well as sweetness. We doubt these will last long, but leftovers should be stored in the fridge. You can even freeze them for later!

Ingredients:

For the crust:

1 c. butter, room temperature

½ c. sugar

2 c. all-purpose flour

For the filling:

½ c. Pittman & Davis Florida Red Mango, diced

1 Tbsp. lime juice

1½ c. sugar

¼ c. all-purpose flour

4 large eggs

1 c. lemon juice

1 tsp. vanilla extract

Powdered sugar, for garnish

Directions:

For the crust:

Preheat oven to 350°F. Line a 9″x13″ baking pan with parchment paper. Mix together butter, sugar, and flour in a stand mixer. Press mixture into bottom of baking pan. Bake until firm and golden (about 15-20 minutes).

For the filling:

  • Puree diced mangoes and lime juice in a heavy-duty blender or food processor until smooth.
  • Combine sugar and flour in a medium-sized bowl. Whisk in eggs, lemon juice, ¼ cup of the prepared mango puree, and vanilla extract. Pour over baked crust.
  • Bake until firm (about 25-30 minutes). Cool to room temperature, dust with powdered sugar, and cut into bars.
