Sumo Mandarin Citrus Fruits are easy to peel, sweet, and juicy like other Mandarins, but they are larger, and are closer in size to Navel Oranges. Sumo Citrus fruits also have tangy outer peels filled with zesty oils. Their flavorful skins make Sumo Citrus Zest a favorite for baking. Sumo Citrus juice and zest give these Citrus Fudge Bars a tropical orange taste that is perfect when you want a sweet citrus dessert or snack.

Ingredients

1 1/2 Cup White Sugar
4 Tbs Butter
2/3 Cup Whole Milk

10 Ounces of White Chocolate Chips
1 Drop Yellow Gel Food Coloring
1 Drop Red Gel Food Coloring
2 Tbs Sumo Citrus Juice
Zest of 1 Sumo Citrus Mandarin
1 Pinch of Kosher Salt

Instructions

Line an 8×8-inch baking dish with wax paper and spray the inside lightly with cooking spray. In a food processor, process the sugar for about 30 seconds. In a medium sauce pan over low heat combine the processed sugar, milk, and butter and heat until butter melts. Once butter is melted, increase heat to medium-high and bring to a boil for 5 minutes.

Remove from heat, add the white chocolate chips and food coloring, and stir. Continue stirring until all chips have melted. Add the Sumo Citrus juice and zest and stir well. Transfer immediately into the lined pan and smooth out the surface with a rubber spatula or large spoon.

Allow the Sumo Citrus Fudge to cool to room temperature for 30 minutes, then transfer to the refrigerator and refrigerate for at least 2 hours before cutting. Once the Sumo Citrus Fudge has chilled, remove from the baking dish by inverting onto a cutting board. Peel away the wax paper and cut into bars. Serve and enjoy.

Tips

Store fudge refrigerated in a sealed plastic container for up to a week.

For deeper orange bars, double the drops of food coloring.

You can also use another orange or tangerine variety if Sumo Citrus is unavailable.
