On hot, sultry summer days when everything seems too heavy, prepare this refreshing salad! It’s full of sweet and cool watermelon, cucumber and mint leaves, while the avocado and feta cheese add a savory touch. A lime-garlic vinaigrette dressing adds zing. For extra bite, toss in some sliced hot pepper!
Ingredients:
For the salad:
5 c. Pittman & Davis Watermelon, cubed
1 c. English cucumber, diced
¼ c. red onions, thinly sliced
⅓ c. feta cheese, crumbled
1 avocado, cubed
⅓ c. mint leaves, torn
½ jalapeño or serrano pepper, thinly sliced, optional
Sea salt, to taste
For the dressing:
2 Tbsp. extra-virgin olive oil
3 Tbsp. lime juice
½ garlic clove, minced
¼ tsp. sea salt
Directions:
In a small bowl, whisk together the olive oil, lime juice, garlic and ¼ teaspoon sea salt. Arrange watermelon, cucumber, and red onions on a large plate or platter. Drizzle with half the dressing. Top with feta, avocado, mint, and pepper (if using) and drizzle with remaining dressing. Season to taste and serve.
