Honey-Ginger Pear Salad2021-10-01
Shift into the subtle sweetness of fall with this heart-healthy salad. Scrumptious Pittman & Davis pears, chewy golden raisins and a touch of honey add a natural sweetness, while crunchy walnuts add a punch of protein. Serve with butternut squash soup on crisp fall evenings, or pack and carry for lunch at work.
1 Pittman & Davis Barlett Pear, sliced
2 tsp. lemon juice
2 tsp. honey
1 tsp. Dijon mustard
½ tsp. grated fresh ginger
¼ tsp. kosher salt
¼ tsp. black pepper
1½ Tbsp. olive oil
2 c. baby spinach
3 Tbsp. golden raisins
3 Tbsp. chopped toasted walnuts
- Whisk together lemon juice, honey, Dijon mustard, grated fresh ginger, kosher salt, and black pepper in a small bowl; gradually add olive oil, whisking until blended.
- Toss together baby spinach, sliced Bartlett pear, and golden raisins in a medium bowl; toss with dressing.
- Divide salad among 4 plates; top with chopped toasted walnuts and serve.
