Pittman & Davis Pear and Blue Cheese Salad with Citrus Vinaigrette Dressing

For the fall and holiday season is an impressive yet easy-to-prepare salad featuring fresh pears and a vibrant citrus vinaigrette. The sweetness of the sliced pears, combined with the honey and acidity from the citrus juices complement the spicy arugula nicely. Wondering which pears to use? For the salad:

  • 4 Pittman & Davis Pears, sliced lengthwise and quartered
  • 4 c. baby arugula greens
  • ⅓ c. blue cheese, crumbled
  • ¼ c. pine nuts, toasted

For the vinaigrette:

  • 2 Tbsp. juice from 1 Pittman & Davis Navel Orange
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. extra-virgin olive oil
  • 2 tsp. honey
  • 1 tsp. Dijon mustard


  • In a small bowl, whisk together orange juice, lemon juice, olive oil, honey and Dijon mustard. Add salt and pepper to taste. Toss vinaigrette gently over greens, mixing well until leaves are coated.
  • Divide greens onto four salad plates. Top with sliced pears, blue cheese, and pine nuts and serve.
