½ Cup Plain Greek Yogurt
1/2 Cup Mayonnaise
1 Medium Tomato, seeded and chopped
¼ cup crumbled Feta Cheese
12 slices of your favorite Bread, toasted
1 1/2 pounds of Deli Roast Beef, sliced thin
2 Ripe Pears, cored, seeded, and sliced thin
6 slices of Swiss Cheese
12 Lettuce Leaves (Romain or Bibb Lettuce)
Instructions
In a small bowl combine yogurt, mayonnaise, tomato, and feta cheese. Stir gently to combine. Spread, evenly divided, over each toast slice. Top 6 of the slices with roast beef, pear slices, cheese, and lettuce, then assemble each sandwich with the remaining 6 spread-covered toasts. This recipe makes 6 sandwiches.
