Thinly sliced pears add a delightful crunch and slight sweetness to this Mediterranean take on the traditional Roast Beef Sandwich. This recipe makes 6 sandwiches so it is perfect for when you have friends over for lunch, or if you are feeding a family. You can also adjust the amounts to make as few or as many as you like.

½  Cup Plain Greek Yogurt

1/2 Cup Mayonnaise

1 Medium Tomato, seeded and chopped

¼ cup crumbled Feta Cheese

12 slices of your favorite Bread, toasted

1 1/2  pounds of Deli Roast Beef, sliced thin

2 Ripe Pears, cored, seeded, and sliced thin

6 slices of Swiss Cheese

12 Lettuce Leaves (Romain or Bibb Lettuce)


In a small bowl combine yogurt, mayonnaise, tomato, and feta cheese. Stir gently to combine. Spread, evenly divided, over each toast slice. Top 6 of the slices with roast beef, pear slices, cheese, and lettuce, then assemble each sandwich with the remaining 6 spread-covered toasts. This recipe makes 6 sandwiches.


These are also delicious when made into wraps.

Make the spread ahead of time and refrigerate for up to 2 days.

Serve with your favorite soup for a complete, easy meal.
